You may associate Indian cuisine with chicken tikka, mutton curries or deliciously fresh breads with garlic and butter. But when it comes to Assam, the North-East state of India where Ashray’s family is from, the staples are dal bhat (lentils and rice) and fish.
Fish vendors like the one pictured here by the roadside in Tinsukia, make a living providing Assamese people with ingredients to make typical dishes like Masor Tenga. This is a tangy fish curry that uses a lot of mustard to flavor the river fish.
If you ever visit Assam (and there’s plenty of reasons why you should!), make sure you try out some typical fish preparations!
